Pressure Canning Meat

Well I finally did it! I have canned for lots of years but meats or meals in jars made me fearful. I got over that and last week I pressure canned beef stew and chicken. I cannot wait to try them.

Follow this simple recipe and take the dive! It was so satisfying in the end that I now have 4 meals ready to go on the shelf.

I canned 4 quarts placing equal parts of meat, potatoes and carrots in the jar of course after cleaning and sterilizing. Then I added boiling beef broth to each jar leaving 1 inch headspace. I also added salt and pepper to each jar and do so to your liking. Process in a pressure canner for 90 minutes with 10psi (that is what we use here in Kentucky so this will differ for others not local)
